Choriqueso (Chorizo Queso Fundido)

A blend of spicy jalapeños, aromatic onions, and garlic are combined with a medley of Mexican cheeses and chorizo in this simple-to-make Choriqueso. Perfect for any gathering, this flavor-packed Mexican dish is served hot and bubbling, and makes a great appetizer with crispy corn tortilla chips or warm tortillas.

Ingredients

Servings
  • 8 ounces chorizo

Instructions

  1. Preheat oven to 350ºF.
  2. Remove the chorizo from the plastic or casing and place it in an oven-safe frying pan or cast-iron skillet over medium heat. Use the back of a spoon to break it up into smaller pieces and cook for about 7 minutes until cooked through.
  3. Remove chorizo from pan, leaving about 1-2 tablespoons of oil in the skillet. Drain the rest of the oil from the chorizo using a mesh sieve over a bowl. Set aside.
  4. In the same skillet, add diced onions, garlic and jalapeños.
  5. Sauté for about 6 minutes until soft and fragrant.
  6. Turn off heat and mix in chorizo with the sautéed veggies.
  7. Remove half of the chorizo mixture and set aside.
  8. Top the remaining chorizo in the skillet with shredded cheese.
  9. Sprinkle the rest of the chorizo over the cheese.
  10. Bake for 12-15 minutes until the cheese is golden and completely melted.

Notes

  • Substitute a serrano pepper for the jalapeño for extra spice, or add both for an even spicier result.
  • I like to use a blend of two Mexican cheeses for optimal flavor. Use cheeses that melt well such as asadero, Chihuahua, Oaxaca, or Mexican muenster. If you cannot find these, you can use Monterey Jack or mozzarella.
