Ingredients
- 2 inch prepared pizza crusts unbaked
- 2 cups fresh cilantro leaves loosely packed
- 1 (4 ounce can) diced green chiles
- 1/4 cup lime juice about 2 limes
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon salt
- 1 cup shredded cooked chicken or diced cooked
- 4 cups shredded Mozzarella cheese
- 1 cup diced sweet onion about 1 onion
Instructions
- Preheat oven to 500 degrees Fahrenheit and place 2 16-inch prepared pizza crusts onto pizza pans.
- In a food processor or blender, combine 2 cups fresh cilantro leaves, 1 (4 ounce can) diced green chiles, 1/4 cup lime juice, 1/2 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/4 teaspoon crushed red pepper flakes, and 1/4 teaspoon salt. Blend until smooth.
- Divide the cilantro-lime sauce evenly and spread over the pizza crusts2 16-inch prepared pizza crusts
- Add on 1 cup shredded cooked chicken (diced or shredded), scattering out evenly over the pizza.
- Sprinkle 4 cups shredded mozzarella cheese evenly between the two pizzas to cover the chicken and prevent it from drying out. Then top with 1 cup diced sweet onion
- Bake in the preheated oven for about 10-12 minutes, until the cheese is bubbling and lightly browned.
