Ingredients
For The Rice:
- 1 cup basmati rice
- 1 1/2 cups water
- 1/4 teaspoon salt
- 1/4 cup cilantro chopped
- Juice of 1 lime
For The Shrimp:
- 2 tablespoons butter
- 2 cloves garlic sliced
- 14 ounces Shrimp uncooked and deveined
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- salt to taste
- freshly ground black pepper to taste
- 1/2 lime cut into wedges, for serving
Instructions
- Add the rice, water, and salt to a pot. Cover and bring to a boil. Reduce the heat and simmer for 15 minutes, or until the water has evaporated. Remove from the heat and let sit covered for 5 minutes.
- In a nonstick skillet over medium heat, melt the butter. Add the garlic, shrimp, paprika, cumin, and a pinch of salt and pepper. Sauté for 5 minutes, or until the shrimp flesh turns pink and white. Set aside.
- Uncover and fluff the rice with a fork. Add the cilantro and lime juice, and toss it all together. Serve the shrimp with the cilantro-lime rice, and serve with an extra wedge of lime.
