For the shrimp:

  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 2 tablespoons lime juice
  • 2 tablespoon fresh cilantro minced
  • 1 ½ pounds medium size shrimp peeled and deveined
  • salt and fresh ground pepper to taste

For the salsa:

  • 1 ripe mango cubed
  • 1 ripe avocado cubed
  • 1/3 cup diced red onion
  • 1 tablespoon fresh cilantro finely chopped
  • 1 a lime for juicing
  • salt to taste

For serving:

  • 6 small flour or corn tortillas
  • additional toppings as desired

Instructions

  1. In a medium bowl, mix together the oil, chili powder, cumin, lime juice, cilantro salt and pepper. Add shrimp to bowl and toss to coat. Let shrimp marinate in the refrigerator for about 10-15 minutes.
  2. While the shrimp are marinating, combine mango, avocado, onion, cilantro, salt, and lime juice in a medium bowl. Mix well.
  3. Heat a large skillet or grill pan over medium-high heat. Add the shrimp to the pan and cook until opaque and cooked through, about 2-3 minutes per side.
  4. Divide the salsa and shrimp evenly among the tortillas and top with any other toppings as desired.

Notes

  • Make-Ahead Salsa: Prep the salsa in advance but leave out the avocado until just before serving to keep it fresh and prevent browning.
  • Customize Your Toppings: Add your favorite toppings like sour cream, cotija cheese, jalapeños, or hot sauce for extra flavor.
  • Grilling Option: For an extra smoky flavor, grill the shrimp on skewers over medium-high heat for about 2-3 minutes per side until opaque and slightly charred.
