Cinnamon Candied Almonds

Candied Almonds flavored with cinnamon and Vanilla. Enjoy this holiday snack with your family and friends.

Ingredients
- 1 cup water
- 8.8 ounces almonds
- ½ cup sugar
- vanilla extract a few drops
- 1 Teaspoon cinnamon ground
- butter

Instructions
- Heat up a pan and pour in water and sugar. Mix it up a bit.
- Add in the almonds, cinnamon powder and vanilla extract and mix everything well.
- Bring to a rolling boil while stirring frequently.
- You will need to reduce the liquids so that the almonds get coated by the flavored sugar. Stir continuously at this point.
- Line a baking pan with parchment paper and butter the paper generously.
- When the almonds are covered by a sticky layer of sugar, take from the heat and spread quickly over the buttered baking sheet. The sugar will harden fast when taken from the heat so don't waste time.
- Leave to cool a bit and when you can touch them break the almond sugar pieces apart wherever they have formed a lump.
- Store in a cool and dry place away from direct sunlight. I like to keep them in a tin box lined with parchment paper. Keep in an airtight container in a hot and humid climate.
Notes
- I calculated the servings based on how much I ended up eating (and I couldn't stop myself because it was so good)
- The candied almonds make a lovely holiday gift for family and friends. I just like to make some for myself. :D
