Cinnamon Simple Syrup

Cinnamon Simple Syrup is a spiced sweetener made by dissolving brown sugar in water infused with broken cinnamon sticks, then finished with vanilla extract. This syrup can flavor beverages like coffee and cocktails, offering warm cinnamon notes balanced by a subtle sweetness and vanilla aroma.

Description

The syrup is prepared by boiling water, brown sugar, and broken cinnamon sticks together until the sugar fully dissolves. After removing from heat, vanilla extract is added, and the mixture is allowed to steep for several hours to deepen the cinnamon flavor. The cinnamon sticks can be left in during storage to enhance the spiciness over time.

This results in a versatile, liquid sweetener combining the richness of brown sugar with aromatic cinnamon and a touch of vanilla warmth. The syrup keeps refrigerated for weeks, making it convenient for multiple uses.

It is well suited for adding a cinnamon twist to iced coffee, cocktails, hot tea, or other drinks, adjusting sweetness and spice levels easily by varying the amount of cinnamon sticks or steeping duration.

Ingredients

  • 1 cup water
  • 1 cup light brown sugar or use half brown sugar and half granulated white sugar to let more cinnamon flavor through
  • 4 cinnamon sticks and break each into 2 or 3 pieces for even more flavor, use more for more cinnamon flavor
  • 2 teaspoons vanilla extract pure

Instructions

  1. In a small saucepan over medium heat, combine the water, brown sugar, and cinnamon sticks. Bring mixture to a boil and cook until all of the sugar has dissolved, stirring fairly constantly, 1-3 minutes.
  2. Remove syrup from the heat and stir in vanilla. Cover and let syrup steep for 4 hours, longer if desired for even more cinnamon flavor. (See Note below)
  3. Remove the cinnamon sticks and transfer the syrup to an airtight container. Store in the fridge for up to 3 weeks. Add to cocktails, coffee, iced coffee, and tea.

Notes

  • Break cinnamon sticks into smaller pieces to increase flavor extraction during cooking.
  • Store syrup in the refrigerator with cinnamon sticks to intensify spiced flavor over several days.
  • For a deeper cinnamon profile, prepare the syrup 5 to 7 days before use to allow full steeping.
