Cinnamon Sugar Soft Pretzel Bites

Cinnamon Sugar Soft Pretzel Bites are small, golden-baked dough pieces made from a rich yeast dough including milk, sugar, and butter. After shaping and rising, they are baked until lightly browned, then coated with a melted butter and a cinnamon-sugar mixture, resulting in soft, sweet bites with a tender texture and a warm cinnamon flavor. These are convenient finger foods ideal for snacks or sharing.

Description

The recipe begins by mixing flour, sugar, yeast, and salt, then adding warmed milk, water, and vegetable oil to form a soft dough. After kneading until elastic, the dough rests briefly before being divided into ropes and cut into bite-sized pieces. The bites are arranged on parchment-lined baking sheets, brushed with egg wash for shine, and baked until golden brown.

Once baked, the pretzel bites are brushed with melted salted butter and tossed in a cinnamon sugar mixture to coat them thoroughly. This provides a sweet, buttery exterior contrasted with the soft, chewy interior typical of pretzel dough. The inclusion of cream cheese and powdered sugar in the ingredient list suggests a sweet cinnamon cream cheese dip can be made to accompany the bites, offering a creamy complement to the warm bites.

These pretzel bites are commonly served warm and can be enjoyed plain or with salt for a savory option. They pair well with mustard, pub cheese, marinara, or other favorite dipping sauces, making them versatile for different occasions.

The recipe notes that reheating in a microwave for about 15 seconds can refresh the softness if served later. Adding coarse salt before baking creates a traditional salted pretzel variant.

Ingredients

Servings
  • 4 to 4-1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 yeast 2 1/4 teaspoons, Fleischmann's RapidRise, envelope
  • 1-1/2 teaspoons salt
  • 1 cup milk
  • ½ cup water
  • 2 tablespoons vegetable oil
  • 1 egg lightly beaten
  • 6 tablespoons butter melted, salted
  • ¾ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 4 ounces cream cheese softened
  • 1 ½ cups powdered sugar sifted
  • 1 teaspoon vanilla extract pure
  • 1-2 tablespoons milk

Instructions

  1. Combine 2 cups flour, sugar, undissolved yeast, and salt in a large bowl. Heat milk, water, and oil until very warm (120° to 130°F); stir into flour mixture.
  2. Stir in enough remaining flour to make soft dough. Knead on floured surface until smooth and elastic, about 4 to 6 minutes. Cover; let rest on floured surface 10 minutes.
  3. Divide into 6 equal pieces. Roll each piece into a 16-inch rope. Cover; let rest for 5 to 10 minutes until risen slightly.
  4. Preheat oven to 425°F. Line 2 baking sheets with parchment paper.
  5. Use a knife, kitchen scissors, or pizza cutter to cut each dough rope into 1-inch pieces to create pretzel bites.
  6. Arrange pretzel bites on prepared baking sheets and make sure none of the pretzel bites are touching. Brush with beaten egg.
  7. Bake in preheated oven for 12-15 minutes, or until golden brown.
  8. Meanwhile, mix together the sugar and cinnamon in a medium bowl.
  9. Remove from oven and allow the pretzel bites to cool for about 5 minutes, or until they are cool enough to be handled.
  10. Dip pretzel bites into melted butter and then roll in the cinnamon sugar mixture until they are fully coated.
  11. In a large bowl with an electric mixer, beat cream cheese for about 2 minutes. Add in powdered sugar and beat until smooth and creamy. Scrape down the sides and bottom of the bowl with a spatula and continue beating for an additional 2 minutes. Add in vanilla extract and mix until combined. Gradually add in milk, 1 teaspoon at a time until optimal dipping texture is achieved.
  12. Serve pretzel bites warm with cream cheese icing.

Notes

  • For salted pretzels, sprinkle coarse salt on bites after applying egg wash and before baking.
  • Serve these pretzel bites warm to enjoy their soft texture and flavor fully.
  • If needed, reheat pretzel bites in the microwave for about 15 seconds before serving.
  • They pair well with mustard, pub cheese, marinara, or other dipping sauces.
