Cinnamon & Toffee Oatmeal Chewies
Description
This recipe starts by creaming softened butter with brown and granulated sugars until fluffy, then adding eggs and vanilla for moisture and flavor. A blend of flour, baking soda, and salt is incorporated next, followed by quick-cooking oats that add chew and texture. Cinnamon chips and toffee bits contribute distinctive sweetness and spice. After forming dough balls spaced apart on parchment-lined sheets, the cookies bake at 350°F (175°C) for about 12-15 minutes.
The resulting cookies have chewy interiors softened by oats and bits of toffee, with bursts of cinnamon flavor from the chips. Their moderate size allows controlled portioning, and the combination of spices and sweetened morsels makes them an enjoyable treat for those who appreciate texture and flavor contrast in baked goods.
These cookies can be enjoyed as an afternoon snack or dessert, pairing well with milk or coffee. They also store well, maintaining their chewy texture if kept in an airtight container.
