Cirtus Cilantro Slaw

Citrus Cilantro Slaw is a light and refreshing side perfect for summer! It works on it's own or topping your favorite tacos!

Ingredients

Servings
  • 4 cups cole slaw mix with shredded cabbage, carrots and purple cabbage
  • 2 cups cilantro chopped
  • ¼ cup orange juice fresh squeezed
  • 3 tbsp lime juice fresh
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. combine cole slaw mix and cilantro in a bowl
  2. in a small bowl whisk together the orange juice, lime juice, olive oil, salt and pepper
  3. pour citrus dressing over top of the slaw mix just before serving and toss
