Ingredients
Cinnamon filling
- 1 cup light brown sugar
- ¼ cup all-purpose flour
- 1 tablespoon ground cinnamon
For the streusel
- ½ cup unsalted butter melted
- ⅔ cup packed brown sugar
- ⅔ cup granulated sugar
- 2 teaspoons ground cinnamon
- 1 cup all-purpose flour
For the cake
- 3 ¾ cups all-purpose flour
- 3 tablespoons cornstarch
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ¼ cup unsalted butter softened
- ¾ cup light brown sugar
- 1 ½ cups granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 ½ cups sour cream
Instructions
For the cinnamon filling:
- In a small mixing bowl, combine the brown sugar, flour, and cinnamon with a whisk until completely combined. Set aside.
For the Streusel:
- Add all the streusel topping ingredients to a small mixing bowl, and mix with a fork until well combined. Set aside.
For the cake:
- Preheat the oven to 350 degrees F. Prepare a 9x13 inch baking dish with parchment paper and cooking spray. Set aside.
- In a large mixing bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.
- In a separate large mixing bowl with a hand mixer, beat the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs, vanilla, and sour cream. Mix until combined.
- Add the dry mixture to the wet and mix until combined, scraping the sides of the bowl with a spatula as needed.
To assemble:
- Pour half the cake batter into the prepared baking dish and smooth out with a spatula.Evenly distribute the cinnamon filling over top. Spread the remaining batter over the cinnamon filling. Sprinkle the streusel on top.
- Bake for 50-55 minutes or until a toothpick can be inserted and come out clean.
- Allow the cake to cool for 20 minutes before cutting.
