Cornbread Muffins

  • 1 cup whole milk 245 g
  • 1 cup cornmeal 122 g
  • 1 cup all-purpose flour 125 g
  • cup granulated sugar 67 g
  • cup light brown sugar packed, 67 g
  • 1 teaspoon kosher salt
  • 3 ½ teaspoons baking powder
  • 1 large egg room temperature
  • ½ cup vegetable oil 109 g
  • honey for serving

Instructions

  1. Preheat the oven to 400°F and line a 12-cup muffin tin with muffin liners.
  2. In a large bowl, combine milk and cornmeal. Let the mixture soak for 10 minutes.
  3. After soaking, add flour, granulated sugar, brown sugar, salt, baking powder, egg, and vegetable oil. Mix until well combined. The batter should be slightly lumpy, but make sure there are no large pockets of dry ingredients.
  4. Divide the batter evenly between the muffin cups, filling each about ¾ full.
  5. Bake for 15 to 18 minutes, or until a toothpick inserted into the center of a muffin comes out with a few crumbs but no wet batter.
  6. Remove the muffins from the oven. Allow them to cool completely before serving.
