  • 2 ½ cups all-purpose flour
  • 4 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 cup cheddar cheese shredded, medium; 113 g
  • 2 cups buttermilk 490 g
  • 1 recipe butter melted, with 1 tablespoon reserved for topping, cowboy butter

Instructions

  1. Preheat the oven to 450°F. Spray an 8x8-inch baking dish with nonstick cooking spray. Set aside.
  2. To a medium bowl, add flour, baking powder, salt, and cheese. Stir to combine.
  3. Pour in the buttermilk. Stir until mostly combined, being careful not to overwork the batter.
  4. Pour most of the melted cowboy butter into the prepared baking dish, reserving 1 tablespoon to brush over the tops of the baked biscuits. Place the dough on top of the butter. Using a spatula (or your hands), evenly spread the dough out to the edges of the pan.
  5. Cut the unbaked dough into 9 squares. Bake for 26-28 minutes, or until the tops are golden brown.
  6. Allow the butter to be absorbed into the biscuits before serving.
