Ingredients
- 1 pound Bacon diced, thick-cut
- 2 large onion finely diced (about 3 cups, yellow
- 2 large shallot diced (about 1 ½ cups, or 6 small shallots
- 2 teaspoons garlic minced
- ½ cup light brown sugar packed, 100 g
- ⅓ cup apple cider vinegar 79 g
- ¼ cup maple syrup pure, 85 g
- 1 teaspoon chili powder optional, but highly recommended
- 1 ½ cups Cranberry fresh, 150 g
Instructions
- In a medium skillet over medium heat, cook bacon until crispy.
- Remove the cooked bacon from the skillet, place it on a plate, and set it aside. Leave about 4 tablespoons of grease in the skillet, discarding the rest.
- To the skillet with the reserved bacon grease, add the onion and diced shallots. Reduce the heat to medium-low. Cook until the onions and shallots are caramelized, 15-20 minutes, stirring often.
- Mix in the garlic, brown sugar, apple cider vinegar, maple syrup, chili powder, cranberries, and pieces of cooked bacon.
- Simmer for 10-12 minutes, or until the cranberries have broken down and the mixture has thickened. It should be the consistency of jam.
- Serve warm or cold, but you may want to warm slightly if it has been refrigerated.
