Cranberry Meatballs

Cranberry Meatballs combine fully cooked frozen meatballs with a sauce made from jellied cranberry sauce and chili sauce, slow-cooked to meld the flavors into a tangy, sweet, and mildly spicy glaze. The sauce’s consistency can be adjusted with cranberry juice. Garnished with parsley or green onions, this dish offers a warm, rich appetizer or main served hot.

Description

This recipe involves placing frozen cooked meatballs into a slow cooker with equal parts jellied cranberry sauce and chili sauce. The mixture is cooked on low heat for about three hours, allowing the sauce to thicken and coat the meatballs evenly. Stirring occasionally ensures even cooking and flavor distribution. If the sauce becomes too thick, cranberry juice is added incrementally to reach the desired consistency. The finished meatballs have a balance of sweetness and a gentle tang, enriched by the chili sauce’s depth.

Cranberry Meatballs suit buffet-style serving or holiday occasions as finger food or a warm appetizer. Adding fresh parsley or green onions adds a fresh contrast to the rich sauce. The slow cooking method simplifies preparation while enhancing taste by allowing the flavors to develop slowly.

Instructions

Meatballs

  1. To the bowl of a slow cooker, add the meatballs, cranberry sauce, and chili sauce.
  2. Cover and cook on low for 3 hours, or until heated through, stirring occasionally.
  3. **If the sauce is too thick, stir in up to ½ cup of cranberry juice, 1 tablespoon at a time, until the desired consistency is reached. (I added ¼ cup juice.)
  4. Adjust the heat setting to warm. The meatballs can be kept on the warm setting for about 3 hours for serving.
