Ingredients:

  • 12-15 baby red potatoes
  • 1 tbsp olive oil
  • Sea salt and freshly cracked black pepper to taste
  • dried parsley to taste

Serving:

  • butter to taste
  • sour cream to taste
  • green onions sliced

Instructions

  1. Preheat the oven to 400 degrees.
  2. Boil the potatoes in a large saucepan of well-salted water for 10-15 minutes or until fork-tender.
  3. Drain in a strainer, then place the potatoes on a baking sheet coated with cooking spray.
  4. Using a potato masher or the bottom of a glass, gently smash each potato until flat.
  5. Drizzle with olive oil, sea salt, and freshly cracked black pepper, to taste
  6. Bake in the oven for 20-25 minutes or until crisp and golden brown.
  7. Top each potato with butter, sour cream, and green onions. Enjoy.
