Cream Puffs

Cream Puffs are delicate baked pastries made from a choux dough cooked on the stovetop before baking until crisp and hollow inside. Once cooled, they are filled with a chilled vanilla pudding and sour cream mixture, giving a creamy, tangy contrast to the light crunchy shells. Powdered sugar dusted on top offers a subtle sweetness and decorative finish.

Description

Cream Puffs begin by boiling water and butter, then incorporating flour vigorously until the dough forms a ball and pulls away from the pan. After cooling slightly, eggs are incorporated one by one to create a smooth, velvety batter. Spoon-sized dollops of dough are dropped onto a baking sheet and baked at 375°F until dry and crisp, typically 20 to 25 minutes or longer for thorough drying. The filling is a blend of instant vanilla pudding mixed with cold milk until dissolved, then thickened further with sour cream and chilled for at least an hour. Once the puffs are completely cooled, they are sliced open and filled generously with the pudding mixture. A dusting of powdered sugar on top finishes the pastries. The result is a light, crispy shell with a creamy, mildly tangy custard center, balancing textures and flavors elegantly, suitable for an indulgent dessert or special occasion treat.
