These delicious pool party cookies start with a white chocolate creamsicle cookie that gets topped with blue pool frosting and a fun little critter floating on top!

Ingredients
Cookies
- ½ cup salted butter (softened)
- ¾ cup brown sugar
- ¼ cup white sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp orange extract
- 2 cups all-purpose flour
- ½ tsp salt
- ½ tsp baking powder
- ¾ cup white chocolate chips
Icing
- 6 cups powdered sugar
- ¼ cup water
- 3 TBS light corn syrup
- Blue Food coloring
Topping
- gummy rings

Instructions
Cookies
- Combine butter, white sugar, and brown sugar, then beat until light and fluffy.
- Add the egg, vanilla extract, and orange extract then mix until incorporated.
- Add in the flour, baking powder, and salt and mix until dry ingredients are just combined with creamed mixture.
- Stir in the chocolate chips so they are evenly distributed throughout dough.
- Divide the cookie dough into 6 equal parts and then form each portion into a ball, being careful not to over handle the dough. Place each ball on a parchment lined baking sheet and chill in the refrigerator for at least 30 minutes.
- While cookies are chilling, preheat the oven to 350 degrees.
- Bake cookies for 15 - 18 minutes, or until the edges just slightly start to brown.
- When cookies are done baking, allow them to cool on the baking sheet for 5 minutes before you transfer them to a cooling rack to finish cooling.
Icing
- Whisk together the powdered sugar, corn syrup, water, and a couple of drops of blue food coloring. Whisk until all ingredients are smooth and well blended.
- Place the icing in a piping bag or Ziploc with the corner snipped off.
- Outline the outer edge of the cookie with icing and allow it set up for 5 minutes, then fill in the center of each cookie with more icing.
Topping
- Before the icing in the center sets up, cut the feet off of the gummy bears, then place a gummy ring in the center of the cookie and put the bear inside the ring.
Notes
- Store cookies in an airtight container for up to three days.
- Freeze the cookies before you ice them (or freeze the cookie dough balls) in a freezer safe bag or container for up to three months. The cookies don’t freeze great once you’ve decorated them but the dough itself freezes well.
- Half the size of the cookies to double the servings the recipe makes. Your pools on top of the cookies will be smaller, but you'll be able to serve more people!
