Creamy Cajun Chicken is a flavorful, one-pot dish that's super easy to make! Cajun-seasoned, tender chicken breasts cooked to golden brown perfection are smothered in an irresistibly spiced cream sauce. Pair with mashed potatoes, pasta or rice for a restaurant-quality dish you can make at home in less than 30 minutes!

Ingredients
- 2 boneless skinless chicken breasts cut in half lengthwise
- 2 teaspoons Cajun Seasoning
- 2 tablespoons olive oil
- 2 tablespoons butter
- ½ cup onion minced
- 3-4 cloves garlic minced
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- salt and pepper to taste
- Chopped fresh parsley or thyme

Instructions
- Season both sides of the chicken breasts with 1 teaspoon of cajun seasoning. Set aside.
- Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large heavy duty pan over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 4-5 minutes on each side. Remove the chicken from the pan and cover to keep it warm.
- Melt another tablespoon of butter and another tablespoon of olive oil in the same pan and add the onion. Cook 3-4 minutes or until soft and tender. Add the garlic and cook for 30 seconds or until fragrant. Whisk in the flour, cooking for about 2 minutes while whisking constantly.
- Slowly whisk in the milk. Add the remaining 1 teaspoon of cajun seasoning and salt & pepper to taste. Simmer over low heat until slightly thickened while scraping all the brown bits off the bottom of the pan.
- Add the chicken back to the skillet and simmer for 2-3 minutes. Spoon sauce over the chicken and garnish with fresh parsley or thyme, if desired.
Notes
- Store leftovers in an airtight container in the fridge for 3 to 5 days. Reheat in the microwave or on the stovetop.
