Crock Pot Teriyaki Steak Bites

Crock Pot Teriyaki Steak Bites are cubed sirloin pieces slow-cooked in a sweet and tangy pineapple-soy sauce infused with garlic, ginger, and apple cider vinegar. The slow cooking tenderizes the meat and melds flavors, with an optional step to thicken the sauce before serving. Garnished with green onions and sesame seeds, these bites pair well with rice and vegetables.

Description

This recipe starts by marinating bite-sized sirloin pieces in a sauce made from pineapple juice, soy sauce, brown sugar, minced garlic and ginger, apple cider vinegar, sesame oil, and black pepper. Slow cooking in a crock pot over several hours allows the meat to absorb these layered flavors while becoming tender. After cooking, the sauce may be strained and thickened to a glaze-like consistency using a cornstarch slurry if a thicker texture is preferred.

The resulting steak bites have a balance of sweetness from pineapple and brown sugar, acidity from apple cider vinegar, and warmth from garlic and ginger. Topping with green onions and sesame seeds adds freshness and crunch. These bites are suitable as a main dish served over steamed rice alongside vegetables such as broccoli or asparagus.

This recipe can accommodate different cuts of meat like stew meat or chuck roast. Leftovers keep well refrigerated for up to three days. Adjust the steak thickness or cutting style to vary texture, with thinner slices possible by pounding the meat before cooking.

Ingredients

Servings
  • 3 lb. sirloin steak
  • 2 Tbsp. corn starch + 1/4 cup cold water

Sauce:

  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 2 Tbsp. garlic minced
  • 2 Tbsp. apple cider vinegar or rice vinegar
  • 1 Tbsp. sesame oil
  • 1 Tbsp. ginger fresh, minced
  • 1/2 tsp. black pepper
  • green onion garnish ideas
  • sesame seed garnish ideas

Instructions

  1. Set the steak out at least 30 minutes before cutting into pieces.
  2. In a liquid measuring cup, whisk together all ingredients for the sauce and set aside.
  3. Then, cut the sirloin into bite sized pieces. Place sirloin pieces in the bottom of a crock pot followed by the sauce all over the top.
  4. Cover with the lid and cook on LOW for 6-7 hours. Stir every hour or so.
  5. The sauce will be thin. If you like it that way, perfect! If you'd like to thicken it (which I recommend), carefully pour the sauce through a fine mesh sieve and then pour the strained sauce in a small saucepan. Bring to a simmer over medium heat. Mix the cornstarch and water together and whisk it into the sauce until it thickens. Taste and adjust sauce as needed.
  6. Garnish with green onions and sesame seeds. Enjoy as is or serve with rice and your veggie of choice! I like broccoli, asparagus or a green salad.

Notes

  • Stew meat, round steak, chuck roast, or flat iron steak can substitute for sirloin.
  • Leftovers can be refrigerated for up to 3 days.
  • For thinner pieces, pound steak slices to about 1/8 inch thickness instead of cubing.
