Instructions
To Prep The Turkey
- In a small bowl, add minced garlic, rosemary, thyme, sage, salt, and pepper. Mix together until combined.
- Open the turkey package and drain the liquid. Pat the turkey dry with paper towels Gently loosen the skin of the turkey breast, being careful not to tear it. Rub half of the garlic and herb mixture and half of the butter under the skin.
- Pour the onion in the bottom of a 6-quart slow cooker evenly. Place the turkey breast on top of the onions, breast-side up. Dot the top of the turkey breast with the rest of the softened butter. Season the top of the turkey breast with the remaining seasoning.
- Pour the chicken broth into the slow cooker around the edge of the bowl, being careful not to wash off the seasonings on the turkey.
Cooking The Turkey Breast
- Cover the slow cooker with a lid. Cook the turkey breast on low for 5-6 hours, or until the internal temperature of the turkey breast reaches 165°F when checked with a meat thermometer. See the notes section, it will depend a little on the size of the turkey breast you have.
- You can then brown the skin (instructions below), or take the turkey out and let it rest on a cutting board for 5-10 minutes before slicing and serving.
To Brown The Turkey Skin (optional)
- Remove the turkey breast from the slow cooker to a sheet pan. Turn the oven on to broil.
- Place the turkey breast under the broiler until the skin is browned, about 2-3 minutes but watch closely to get the desired color. Remove the turkey from the oven. Let the turkey rest for 5-10 minutes, then slice and enjoy!
Notes
- Estimate 1- 1 1/2 pounds of turkey per person when deciding how much turkey you need. Remember that because this turkey is on the bone, the weight of the bone is also included when we are estimating. If you want a lot of leftovers or will keep side dishes limited, 2 pounds of turkey per person can be a better estimate.
- Turkey breasts on the bone usually come in 4-6 pound birds though you can sometimes find them as small as 3 pounds and as big as 9 pounds. Turkey needs to register internally at 165 degrees with a meat thermometer.
- 3-5 pounds - the turkey will take 5-6 hours when cooked on low.
- 5-7 pounds - the turkey will need to cook for 6-7 hours on low.
- 8-9 pounds - the turkey will need ot cook for 7-8 hours on low.
- If you happen to have a 7-9 pound bird or a whole turkey and not just a turkey breast, you will likely need at least an 8 quart slow cooker. If for some reason you can't fit the entire turkey into the slow cooker, you can cut the bird into pieces to make it fit, but know that the smallest pieces may cook a little quicker then the rest of the bird.
- Garlic powder can be substituted for the fresh garlic cloves, swap 1 1/4 teaspoons of garlic powder for the cloves of garlic. Minced garlic in a jar can also be used, use 2 teaspoons of minced garlic in a jar in place of the cloves of garlic.
- Dried herbs can be used in this recipe, swap a teaspoon of dried herbs each for the fresh rosemary, fresh thyme and fresh sage.
- You can also use 1 tablespoon of dried poultry seasoning in place of the fresh rosemary, fresh thyme and fresh sage. I highly recommend still including the garlic, salt and pepper with the poultry seasoning for maximum flavor.
- I often also add the juice from one lemon and it can brighten up the final flavor of the turkey. Squeeze the juice from one lemon all over the turkey breast. You can place slices of the squeezed lemon under the skin, in the turkey cavity or just in the slow cooker to further enhance the flavor.
- Don't be afraid to increase the butter a little more as turkey is lean. I'll often use between 2-4 tablespoons of butter.
