Ingredients
Chicken and Vegetables
- 4 boneless skinless chicken breasts
- ½ yellow onion, minced
- 2 stalks celery, diced
- 2 whole carrots, peeled and diced
- 6 ounces green beans, trimmed and chopped
- ¼ cup unsalted butter, cubed
- 3 cups chicken broth
- 2 teaspoons fresh oregano
- 2 teaspoons fresh thyme
- 2 teaspoons fresh parsley
- salt and pepper to taste
- ⅔ cup Flour, divided
Dumplings
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon coarse salt
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons cold unsalted butter, cut into cubes
- 1/2 cup whole milk
Instructions
Chicken and Vegetables
- To a crockpot, add the chicken breasts, onion, carrots, and green beans. Place the cubed butter over the top of the chicken and vegetables.
- In a medium bowl, whisk together the chicken broth, oregano, thyme, parsley, salt and pepper to taste. Gradually add ⅓ cup flour into the broth and whisk to avoid clumps.
- Pour the broth over the chicken and vegetables.
- Set the crockpot to high and cover, cook for 3-4 hours, until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
- Once the chicken is cooked through, remove it from the crockpot. Shred or chop the chicken depending on your preference.
- Whisk in the remaining ⅓ cup flour to thicken the gravy. Add the chicken back to the crockpot.
Dumplings
- In a large bowl, add the flour, baking powder, coarse salt, and fresh parsley.
- Cut in the butter until evenly distributed then stir in milk.
- Drop spoonfuls of the dumpling mixture on top of the chicken and vegetables in the crockpot.
- Cover and allow the dumplings to cook through completely, about 1-1 ½ hours.
- Once the dumplings are cooked through, garnish with additional fresh parsley and enjoy!
