Czech Vepřenky Pork Patties

Join me for a taste of Czech-style pork patties, called vepřenky. The recipe is straightforward to prepare, and the fried cakes have an absolutely delicious flavor.

Ingredients
- 1 pound ground pork
- 1 teaspoon sweet ground paprika
- 1 teaspoon salt
- 1 ½ cup white bread such as a French baguette
- ¼ cup cold water
- canola for frying (or sunflower oil)

- 2 medium onions peeled, cut into thin circles
- 4 Tablespoons yellow mustard

Instructions
- Place 1 ½ cup white bread in a bowl, cover them with ¼ cup cold water. Let the bread soak for about 10 minutes. Then, remove the bread and squeeze out the excess water.
- Place 1 pound ground pork in a bowl and add 1 teaspoon salt, 1 teaspoon sweet ground paprika, and cold water. Mix everything with your hands, kneading well between your fingers until you get a smooth meat mixture.
- Add the squeezed bread to the meat mixture and stir to combine. Avoid kneading the meat for too long, ensuring the mixture remains cold and does not become warm.
- Heat a non-stick frying pan to medium heat and pour a little canola oil into the pan.
- With wet hands, shape the meat mixture into patties that are 3-4 inches in size and about ⅓ inch thick.
- Fry the patties in the heated oil for about 3 minutes on each side.
- Peel 2 medium onions and cut it into circles. Serve the pork patties spread with 4 Tablespoons yellow mustard and topped with the onion rings.
Notes
- SERVING:
- The basic recipe makes 10-12 pork patties.
- SERVING: Before serving, brush one side of each pork patty with yellow mustard. Arrange them on a plate with the side dish, and sprinkle the patties with thinly sliced onion rings. Pork patties are served warm. Boiled or mashed potatoes, drizzled with melted butter, make a suitable side dish.
- Vepřenky patties are a perfect on-the-go meal. Czechs enjoy them smeared with mustard and garnished with onion rings, placed between two slices of rye bread for a tasty snack during family trips.
- Use a non-stick frying pan and flip the patties carefully, as they can sometimes stick to the bottom of the pan.
- If you are unsure whether the ground pork is sufficiently seasoned, fry a small sample of the meat in a pan. Taste it and adjust the seasoning as needed.
