Description

This recipe starts by heating almond milk with cocoa powder, chopped dark chocolate, coconut sugar, and a pinch of salt until everything melts together smoothly. A slurry of cornstarch and reserved almond milk is whisked into the mixture to thicken it on the stove for about a minute. Once thickened and removed from heat, vanilla extract is stirred in.   • 2 cup almond milk reserve two tablespoons for cornstarch slurry, unsweetened
  • 3 tablespoons cocoa powder unsweetened
  • 1 1/2 ounce dark chocolate I used Lindt 70% cocoa
  • 1/2 cup coconut sugar
  • Pinch kosher salt
  • 2 tablespoons cornstarch or arrowroot
  • 2 teaspoons vanilla extract

Instructions

  1. In a medium saucepan on medium heat stir together; almond milk, chocolates, sugar and salt until chocolate and sugar is melted (about 4-5 minutes).
  2. Make a slurry. In a small bowl whisk together two tablespoons of reserved almond milk and 2 tablespoons of cornstarch/arrowroot.
  3. Once it's smooth, whisk it to the saucepan with all the ingredients. Whisk until it begins to thicken (about 1 minute).
  4. Remove from heat and stir in vanilla. Let cool for about 20 minutes before pouring into popsicle molds. Freeze for at least 4 hours.

Notes

  • Organic coconut palm sugar is used here but granulated sugar can be substituted if unavailable.
  • Almond milk is used for dairy-free purposes, but any milk can be used if dairy is acceptable.
