Date Caramel Sauce (Vegan, No Coconut)

Vegan date caramel sauce is a healthy alternative to classic caramels made with sugar and dairy. Oat milk makes it extra creamy, and prep is SO easy! Just blend it, heat it, and enjoy with everything from ice cream and sliced apples to pancakes and biscotti. Ingredients

  • about 9 large Medjool dates, pitted 5½ ounces
  • 1 cup oat milk, store-bought or homemade see Notes
  • 1 ½ teaspoons vanilla extract
  • teaspoon fine sea salt
  • 1 to 2 tablespoons maple syrup, optional or brown rice syrup

Instructions

  1. Place pitted dates in a bowl and cover with boiling water. Set aside for 15 to 20 minutes to soak, then drain well.
  2. In a blender combine the softened dates, oat milk, vanilla, and salt. Blend on high speed until smooth.
  3. Pour the caramel into a small, heavy-bottom sauce pan. Taste for sweetness, and add maple syrup, if desired. Slowly bring the mixture to a simmer, whisking frequently. Cook for about 3 minutes or until fragrant and slightly darker in color.
  4. If the caramel sauce is thicker than you like, whisk in a touch more milk and maple syrup. Serve warm or chilled.

Notes

  • Milks - other non-dairy milks work, too, such as almond, soy, or coconut. But since they don't thicken in quite the same way, you may want to start with a lesser amount.
  • Store in a covered container in the refrigerator for up to one week. To freeze, transfer to a freezer-safe container or ice cube tray. Thaw before use or use from frozen for smoothies, granitas, frozen cocktails and coffee drinks.
