Description

The Dulce de Leche Cinnamon Sandwich Cookies start with a creamed butter and sugar dough infused with vanilla and cinnamon-spiced sugar for rolling. After chilling, the dough is rolled into balls coated in cinnamon sugar, then baked until the edges show a light golden color but the centers stay soft.

Once cooled slightly, a filling made by melting butter and stirring in canned dulce de leche is spread between two cookies, creating a sandwich with a creamy, caramel-like texture and sweet cinnamon flavor on the outside.

These cookies offer a tender crumb with a pronounced sweet and spicy cinnamon aroma balanced by the rich, smooth dulce de leche filling. They work well as a dessert or sweet snack and pair nicely with coffee or tea.

Ingredients

Servings
  • 1 cup butter softened
  • 1 cup sugar plus 1/2 cup for rolling
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon to be mixed with remaining 1/2 cup of sugar for rolling
  • dulce de leche filling
  • 1 Tablespoon butter
  • 1 - 13.4 ounce dulce de leche such as Nestle Dulce de Lechera, canned

Instructions

  1. In a large mixing bowl, cream butter and 1 cup of sugar for 4 minutes, until light and fluffy.
  2. Add egg and vanilla and mix for 1 minute.
  3. Stir in flour, baking soda, and salt.
  4. Let mixture chill in the refrigerator for 10-15 minutes.
  5. Combine 1/2 cup of sugar and 2 teaspoons of cinnamon in a shallow bowl.
  6. Roll into 16 - 24 balls, depending on the desired size of cookies.
  7. Drop into cinnamon sugar mixture and coat well.
  8. Place on parchment or Silpat covered baking sheet.
  9. Bake at 350 degrees for 9 - 11 minutes or until lightly golden brown on edges but still soft.
  10. May sprinkle with remaining cinnamon-sugar as soon as removed from the oven.
  11. To make filling: melt butter in small saucepan. Remove from heat and immediately stir in the can of dulce de leche. Spread dulce de leche on the bottom of cookie and top with another cookie.
