Ingredients

Servings

Salad:

  • 1 cup potato diced, cooked
  • 1 cup beet diced, cooked
  • ¼ cup onion thinly sliced
  • 1 apple diced, small size
  • 1 egg diced, hard-cooked
  • ½ cup firm cheese e.g. Gouda, Cheddar, Edam, cubes
  • ¼ cup pickle diced

Dressing:

  • 2 Tablespoons cider vinegar
  • 2 Tablespoons extra virgin olive oil
  • salt pepper to taste

For serving:

  • ¼ cup mayonnaise or more, good

Instructions

  1. Combine salad ingredients and toss until well mixed.
  2. Whisk together dressing ingredients then toss with salad.
  3. Serve salad with a generous dollop of mayonnaise.
