Instructions

  1. Place the beef in a large bowl, add flour, 1 teaspoon salt and pepper, and toss well to combine.
  2. Heat 1 tablespoon of olive oil in a large Dutch oven or deep pot over medium heat. Add half the beef in a single layer and cook undisturbed for 5 minutes. Flip and cook for an additional 5 minutes on the other side. Set aside. Repeat with the remaining olive oil and beef. Return the reserved beef back to the pot.
  3. Add the onions and garlic, and cook with the beef until the onions are translucent and the garlic is fragrant, about 5 minutes.
  4. Add the tomato paste and continue to cook with the onions and garlic, about 1-2 more minutes.
  5. Add the potatoes, carrots, celery, thyme, basil, and remaining salt along with the broth and stir to combine, scraping any brown bits in the pot.
  6. Reduce heat to low, cover and simmer for about 1.5 hours to 2 hours, or until the beef is very tender.
  7. Remove the bay leaves, season with fresh parsley and serve warm.

Notes

  • Storage: Keep any leftovers in an airtight container in the fridge and they will keep for around 3 days. You can also freeze the stew and it will keep for up to 3 months.
