Ingredients

Servings
  • 8 ounces cream cheese room temperature
  • 1 can chili 15-ounces (I used with beans, Hormel brand, with or without beans
  • 1 can green chilies 4-ounces (OR ¼ cup diced jarred jalapenos, diced
  • 8 ounces Monterey jack cheese shredded
  • 2-3 tablespoons cilantro chopped, fresh
  • salt flaky
  • ½ cup tomato optional, diced, fresh
  • ¼ cup green onion optional, sliced
  • sour cream optional

Instructions

  1. Preheat oven to 350°F.
  2. Spread softened cream cheese into the bottom on an 8x8-inch baking dish. Spread Hormel chili onto the cream cheese layer.
  3. Next, layer on the diced green chilies. There is no need to drain the green chilies, but if you are using jarred jalapenos, be sure to drain the brine.
  4. Add cheese and bake for 30 minutes or until the cheese is melted and lightly browned.
  5. Sprinkle with a pinch of flaky salt and chopped cilantro. Add on your toppings of choice such as fresh tomatoes, green onions and sour cream. Serve warm with tortilla chips, Fritos Scoops, or even fresh veggies such as celery and carrots.

Notes

  • Feel free to sub in Mexican blend cheese, Colby-Jack, Cheddar or Pepper Jack cheese for the Monterey Jack. I prefer to grate my own cheese as I find it melts better, but bagged cheese will work just fine.
  • You can also sub in leftover homemade chili for the Hormel, just be sure the texture of the chili is on the thicker side.
