Ingredients

  • 1 cup butter
  • 1 ½ cups brown sugar packed
  • 1 large egg + 1 egg yolk
  • 1 tablespoon vanilla extract
  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt or scant 1/2 teaspoon table salt
  • 2 cups old-fashioned rolled oats
  • 10 ounce package chocolate chips
  • 1/2 cup Chopped pecans or walnuts optional

Instructions

  1. Preheat oven to 375 F. Line baking sheets with parchment paper or silicone baking mat.
  2. Melt butter in a microwave-safe bowl.
  3. Add brown sugar, and stir to combine.
  4. Let stand 5 minutes.
  5. Add egg and egg yolk; stir to combine.
  6. Stir in vanilla extract.
  7. Add flour, baking soda, and salt. Stir until just combined.
  8. Stir in oats until just combined.
  9. Add chocolate chips and nuts, if using, and stir in.
  10. Using a medium cookie scoop (1.5 tablespoon), drop scoops of dough 2 inches apart on prepared cookie sheet.
  11. Bake for about 7-10 minutes, or until the edges of the cookies are golden brown.
  12. Let cool on cookie sheet for 5 minutes. Remove to wire rack to finish cooling.

Notes

  • Butter: I use salted butter in this recipe. If using unsalted butter, increase the salt by 1/2 teaspoon. Also, I melt the butter about 85% of the way and then whisk until completely melted. Butter that is too hot will give you greasy cookies.
