  • 2 cans corn 15 ounces each, undrained, whole kernel
  • 2 cans creamed corn 14.75 ounces each
  • ½ cup butter melted
  • 1 cup sour cream
  • 2 egg lightly beaten
  • 2 tablespoons sugar optional
  • 1 box cornbread mix 15 ounces, Simply Homemade® brand
  • 2 cups cheddar cheese shredded

Instructions

  1. Preheat oven to 350 degrees.
  2. Butter a 9 x 13-inch baking dish, or spray with nonstick cooking spray.
  3. In a large bowl, stir together the corn, creamed corn, butter, sour cream, eggs and sugar until combined. Stir in the Simply Homemade® Cornbread Mix until fully incorporated. Fold in the cheese.
  4. Spoon the batter into the prepared baking dish and smooth into an even layer.
  5. Bake in preheated oven for 1 hour and 20 minutes. The top will be golden brown and the center will have the very slightest jiggle to it.
  6. Remove the pan to a cooling rack and cool for 20 minutes before serving.
