Easy Corn Casserole
Description
Easy Corn Casserole combines canned whole kernel corn and creamed corn with melted butter, sour cream, lightly beaten eggs, optional sugar, and a box of cornbread mix. Shredded cheddar cheese folded in adds savory depth. After mixing, the batter is baked at 350°F in a buttered dish for over an hour until the top is golden and the center has a slight jiggle, indicating moistness. The cornbread mix provides structure and crumb while the cheeses and dairy ingredients give creamy mouthfeel.
The casserole is rich and smooth from the creamed corn and sour cream, with bursts of corn kernels for variety. It pairs well with roasted or grilled meats and is suitable as a warm comforting side dish for family meals or special occasions.
Ingredients
- 2 cans corn 15 ounces each, undrained, whole kernel
- 2 cans creamed corn 14.75 ounces each
- ½ cup butter melted
- 1 cup sour cream
- 2 egg lightly beaten
- 2 tablespoons sugar optional
- 1 box cornbread mix 15 ounces, Simply Homemade® brand
- 2 cups cheddar cheese shredded
Instructions
- Preheat oven to 350 degrees.
- Butter a 9 x 13-inch baking dish, or spray with nonstick cooking spray.
- In a large bowl, stir together the corn, creamed corn, butter, sour cream, eggs and sugar until combined. Stir in the Simply Homemade® Cornbread Mix until fully incorporated. Fold in the cheese.
- Spoon the batter into the prepared baking dish and smooth into an even layer.
- Bake in preheated oven for 1 hour and 20 minutes. The top will be golden brown and the center will have the very slightest jiggle to it.
- Remove the pan to a cooling rack and cool for 20 minutes before serving.
