Easy Creamy Boursin Chickpeas Recipe

This Easy Creamy Boursin Chickpeas recipe sautés shallots and garlic in olive oil before simmering chickpeas with garlic and herb-flavored Boursin cheese and vegetable broth. The result is a warm, creamy dish with a flavorful sauce that coats the chickpeas. Slightly loose when served, the sauce thickens as it cools, providing a rich, comforting texture.

Description

The recipe starts by gently cooking thinly sliced shallots until soft and fragrant, then adding minced garlic and black pepper for a savory base. Then chickpeas, a block of garlic and fine herbs Boursin cheese, and vegetable broth are added to the skillet. Simmering uncovered concentrates the flavors and melds the cheese into a loose, creamy sauce that coats the chickpeas.

The garlic and herb Boursin imparts a gentle tangy, aromatic character combined with the earthiness of the chickpeas. The small amount of vegetable broth thins the sauce slightly while cooking, allowing the cheese to melt evenly. As the dish cools, the sauce thickens to a gravy-like consistency.

This dish can be served warm as a side or light vegetarian main. It benefits from gentle reheating with additional broth to restore creaminess if leftovers are stored.

Leftovers keep well for up to 4 days refrigerated. Reheating on the stove top with extra broth helps maintain texture. Freezing is not recommended for this dish due to the dairy content.
