  • 1 tablespoon butter unsalted
  • 1 tablespoon olive oil
  • 2 yellow onion chopped (about 3 cups, medium
  • 3 garlic chopped (about 1 tablespoon, cloves
  • 2 tablespoons all-purpose flour leave out for GF
  • 3 cups chicken stock or vegetable stock
  • 1 can crushed tomatoes (28 oz can)
  • salt Kosher salt and freshly ground
  • black pepper Kosher salt and freshly ground
  • 1/4 - 1/2 cup sour cream or Greek yogurt + more for garnish

Instructions

  1. In a large pot or Dutch oven, heat the butter and olive oil over medium heat. Add the onions and a small pinch of salt and cook over medium-low heat for 15 minutes, stirring occasionally, until lightly golden brown. Add the garlic and cook for another minute. Sprinkle in the flour and stir, cooking for another 3 minutes.
  2. Stir in the chicken stock and tomatoes. Bring the soup to a boil, then lower the heat and simmer for 15 minutes. Purée soup with an immersion blender (or in batches in a regular blender) until smooth. Stir in the sour cream and serve.
