Instructions

  1. To a blender add fresh spinach, milk, vanilla extract and mint extract (optional.) Blend the mixture together until it becomes a liquid and the spinach is smooth with no leafy pieces.
  2. Add honey, olive oil, and egg to the blender Pulse five to six times or gently mix the wet ingredients together.
  3. In a large bowl combine flour and baking powder and blend until thoroughly mixed.
  4. Pour the blender into the large bowl. With a whisk quickly blend the batter together well until all lumps are gone and the batter is smooth. Add the chocolate chips and stir until combined.
  5. Heat frying pan on medium heat and melt some of the butter. Working in small batches, use a quarter cup measuring cup to add green spinach pancake batter to hot pan. Add more butter as needed between batches to keep the pancakes from sticking.
  6. Flip spinach pancakes when they begin to bubble. Pancakes will take a minute or two on each side. Continue to work in small batches until all pancakes are cooked, then enjoy!
