Easy Kolacky Cookies
Description
The dough for these kolacky cookies is made from room temperature unsalted butter and cream cheese mixed with all-purpose flour, forming a soft but slightly sticky dough that is chilled briefly to firm up. It is rolled out thinly and cut into squares. A spoonful of fruit pastry filling is placed in the center of each square, after which opposite corners are folded over and sealed to encase the filling.
Baked cookies are delicate with slightly flaky edges and a soft crumb that contrasts the sweet, jammy center. Sprinkling lightly with powdered sugar after baking adds a fine sweetness and an attractive finish. They are traditionally served warm but remain enjoyable the next day though the texture softens slightly.
These kolacky cookies pair nicely with hot beverages and are a popular treat for dessert or teatime. The recipe makes about 20 cookies, suitable for small gatherings or a sweet snack.
Store cooled kolacky in an airtight container in the refrigerator for up to four days or freeze for up to six months to maintain freshness. When rolling, dust surfaces and rolling pin lightly with flour to prevent sticking but avoid over-flouring to keep dough tender.
Ingredients
Cream cheese dough:
- 1 tick butter at room temperature, unsalted
- 4 ounces cream cheese at room temperature
- 1 ¼ cups all-purpose flour
Filling:
- 1 cup pastry fruit filling
Misc.
- 2 Tablespoons powdered sugar for sprinkling
Instructions
- Before you start cooking: Take 1 stick unsalted butter and 4 ounces cream cheese out of the refrigerator at least two hours in advance to allow them to come to room temperature.
- Put the butter, cream cheese, and 1 ¼ cups all-purpose flour in a large bowl. Begin mixing the ingredients with a fork. Once the dough has come together into a homogeneous mass, knead it with your hands until smooth.
- Wrap the dough in plastic wrap and place it in the freezer for 10-15 minutes, but no longer.
- Lightly dust the work surface with flour to prevent the dough from sticking. Roll the dough into a rectangle, as evenly as possible, to a thickness of ⅛ inch.
- Cut the rolled-out dough into squares of approximately 2 ½ inches. Place about 1 to 1 ½ teaspoons of filling in the middle of each square.
- Using a kitchen knife, lift opposite corners of the dough and fold them one by one over the filling. Press the folded ends of the dough together to seal.
- Carefully transfer the Kolacky cookies to a baking sheet lined with parchment paper.
- Preheat the oven to 340 °F. Place the baking sheet with kolacky in the preheated oven and bake for about 15 minutes, until golden.
- After baking, let the Kolacky cookies cool slightly, then sprinkle them with powdered sugar and serve.
Notes
- This recipe yields about 20 kolacky cookies, suitable for a small batch dessert or snack.
- Serve kolacky warm for the best texture and flavor, ideally with coffee or tea.
- When rolling the dough, lightly dust your work surface and rolling pin with flour to prevent sticking, but maintain some stickiness for tenderness.
- Store cooled cookies in an airtight container refrigerated for up to 4 days or freeze for up to 6 months; thaw overnight before consuming.
