Easy One Pot Sausage Casserole

Quick, easy and very tasty, this Easy One Pot Sausage Casserole is guaranteed to be a real crowdpleaser! Serve with mounds of buttery mash or steamed white rice for a comfort food classic.

Ingredients
- 1 tablespoon olive oil
- 8 thick pork sausages (I like Tesco Finest)
- 2 Red Onions sliced
- 2 red peppers sliced
- 3 cloves garlic crushed or grated
- 400 g tin chopped tomatoes
- 400 g tin haricot beans drained
- 400 ml chicken stock (made from a cube – I use Kallo Organic)
- 1 teaspoon dried mixed herbs (or Italian mixed herbs or Herbes de Provence)
To serve:
- Mashed potatoes, white rice or crusty bread
- Green veg such as greens, broccoli, green beans or peas

Instructions
- Heat the olive oil in a wide, reasonably deep, pan for 1 minute. Add the sausages and fry over a medium-high heat for 5 minutes or until brown on most sides. Stir occasionally so the sausages get brown all over.
- Remove the sausages to a plate and add the sliced onions and peppers to the pan. Turn the heat down, cover with a lid and cook gently for 3-5 minutes until softened and just starting to go brown, stirring occasionally.
- Add the garlic and fry for 1 minute over a gentle heat with the lid off.
- Add the tomatoes, haricot beans, chicken stock and mixed herbs. Add the sausages back into the casserole, then turn the heat up and bring to the boil.
- Reduce the heat so the casserole is simmering gently and cook for 15 minutes with the lid off until the sauce has thickened and reduced a little and the sausages are cooked all the way through
- Serve with your choice of mashed potatoes, white rice or crusty white bread and some green veg.
