Ingredients

  • ¾ C sour cream
  • ½ C canola oil
  • 2 egg
  • 1 C sun-dried tomatoes packed in oil, diced
  • 1 ¾ C flour
  • ¾ C feta cheese
  • 1 Tbsp sugar
  • 1 C basil chopped, fresh
  • 1 ½ tsp baking powder
  • 1 tsp lemon zest
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp baking soda

Instructions

  1. Preheat oven to 350 degrees.
  2. In a small bowl, combine the sour cream, canola oil, eggs, and sun-dried tomatoes, stirring until thoroughly mixed.
  3. In a second, larger bowl, whisk together the remaining ingredients. Add the wet ingredients and stir until just combined, then spoon into 3 mini loaf pans, or one regular-sized loaf pan.
  4. Bake for 25-30 minutes, or until golden on top and a toothpick inserted into the center of the loaf comes out clean.
