The batter includes sugar, flour, baking soda, salt, butter, water, cocoa powder, buttermilk, and eggs, blended with a hot cocoa-water-butter mixture to dissolve cocoa and combine flavors evenly.

After baking at 325 degrees Fahrenheit for about 11-12 minutes, the small cakes cool slightly before being frosted. The frosting uses the same flavor profile with buttermilk, butter, cocoa powder, powdered sugar, and vanilla, heated and whisked to a smooth consistency suitable for spreading. FROSTING

  • 1/3 cup buttermilk
  • 1/2 cup butter
  • 5 tablespoon cocoa powder
  • 1 lb powdered sugar
  • 1 teaspoon vanilla extract

Instructions

CAKE

  1. Preheat oven to 325 and prepare a mini muffin tray by lining it with paper liners or spraying with cooking spray.
  2. In a medium bowl, combine the sugar, flour, baking soda, and salt. Set aside.
  3. In a saucepan, combine the butter, water, and cocoa powder. Bring to a boil, stirring frequently.
  4. Remove from heat and slowly pour mixture into sugar/flour mixture.
  5. Gently mix together.
  6. Fold in buttermilk and mix in the eggs.
  7. Stir until combined.
  8. Scoop about 1 tbsp. of the batter (it will be thin, that is okay) into each prepared muffin tray.
  9. Place tray into oven and bake for 11-12 minutes.
  10. Remove from oven and allow to cool about 3-4 minutes before removing from tray.
  11. Place on cooling racks and allow to cool completely before frosting.

FROSTING

  1. In a saucepan, combine the buttermilk, butter, and cocoa powder over medium heat.
  2. Once mixture comes to a boil, remove from heat.
  3. Whisk in the powdered sugar and vanilla until all is combined and no longer lumpy.
  4. Carefully spoon frosting onto cooled cake bite.
  5. Enjoy!
