  • 2 cups vegetable broth
  • 1 cup unsweetened coconut milk or any plant-based milk
  • 1 teaspoon sugar (optional, to balance acidity)
  • ½ teaspoon dried oregano
  • salt and pepper, to taste
  • ¼ cup fresh basil leaves, chopped (plus extra for garnish)

Instructions

  1. Sauté Aromatics:Heat olive oil in a large pot over medium heat. Add the diced onion and cook until soft, about 5 minutes. Stir in the garlic and cook for another 1-2 minutes, until fragrant.
  2. Cook Tomatoes:Add the chopped tomatoes (or canned tomatoes) to the pot. Stir in the vegetable broth, dried oregano, and sugar (if using). Season with salt and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  3. Blend the Soup: Using an immersion blender or transferring the soup to a blender, blend until smooth. Be careful if the soup is hot.
  4. Add Coconut Milk: Return the soup to the pot, if blended separately. Stir in the coconut milk and simmer for another 5 minutes. Adjust seasoning as needed.
