Easy Yogurt Soda Bread

  • 250 g all-purpose flour 9 oz/ 2 cups, Note 1, + 1-2 extra tablespoons
  • 150 g whole wheat flour 5.5 oz/ 1 ¼ cup
  • 1 ¼ teaspoon baking soda
  • 1 ½ teaspoon salt or Kosher, fine sea salt
  • 3 tablespoons seed mix divided, Note 2
  • 425 g Greek yogurt full fat, 15 oz/ 1 ½ cup
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 430°F/ 220°C. Line a baking tray with parchment paper.
  2. Dry ingredients: Whisk flour, baking soda, and salt in a large mixing bowl. Add ¾ of the seeds and mix again.250 g all-purpose flour + 1-2 extra tablespoons/ 9 oz/ 2 cups + 150 g whole wheat flour/ 5.5 oz/ 1¼ cup + 1 ¼ teaspoon baking soda + 1 ½ teaspoon fine sea salt + ¾ of 3 tablespoons seeds mix
  3. Wet ingredients: Combine yogurt, honey, and olive oil in another bowl.425 g Greek yogurt/ 1½ cup + 1 tablespoon honey + 1 tablespoon olive oil
  4. Dough: Make a well in the middle of the flour mixture. Add the yogurt mixture and stir to combine using a spoon.
  5. Shape: Sprinkle the work surface with 1 tablespoon of flour. Place the dough on it and sprinkle it with a little bit of flour. Knead gently with floured hands, only 4-5 times, to bring the dough into shape. Form a round loaf and transfer it to the baking sheet.
  6. Brush the top of the bread with one tablespoon of milk and sprinkle the remaining seeds on top.1 tablespoon milk + remaining seeds
  7. Cut a deep cross with a serrated knife.
  8. Bake the soda bread at a high temperature for 15 minutes.
  9. Reduce temperature to 400°F/ 200°C. Bake for another 20 minutes or until the soda bread is baked through.
  10. Check: The bottom of the bread should sound hollow. If it doesn’t, bake for another 5 minutes and check again.
  11. Let cool on a wire rack for about 30 minutes before slicing.
