Eclair Cake

Eclair Cake is a layered no-bake dessert made with instant vanilla pudding mixed with whipped topping and milk, layered between graham crackers and topped with melted chocolate frosting. After chilling, it sets into a creamy, textured treat combining smooth pudding, crunchy crackers, and sweet chocolate.

Description

This recipe combines instant vanilla pudding mix with whipped topping and milk to create a light, creamy filling. A single layer of graham cracker squares lines a 13x9 inch pan, topped with half the pudding mixture. A second layer of crackers is covered with the remaining pudding, followed by a final cracker layer. The whole cake is then coated with melted chocolate frosting spread evenly over the surface.

The chilled dessert results in soft crackers that soak up some moisture from the filling while maintaining slight texture. The layers balance creamy filling with the slight crisp of graham crackers and a sweet chocolate topping to complete the flavor.

The cake needs to chill for at least four hours to allow the pudding to set and the layers to meld, making it suitable for preparing ahead for gatherings or quick desserts.
