Eggnog No Bake Cheesecake

Eggnog is long overdue for some internet support. One of the ways I'm doing my part is by sharing this no-bake eggnog cheesecake recipe.

Ingredients

  • 1 ½ cups Graham crackers, crushed
  • 10 tablespoons butter, melted
  • 4 tablespoons brown sugar, packed
  • 1 ½ teaspoons ground cinnamon, divided
  • 1 teaspoon nutmeg, divided
  • 2 pkg (8 oz) cream cheese, softened
  • 1 cup granulated sugar
  • ¼ teaspoon salt
  • 1 cup heavy whipping cream
  • ½ cup eggnog

Instructions

  1. Get out your ingredients to make your no bake eggnog cheesecake!
  2. Mix the graham crackers, butter, brown sugar, 1 teaspoon of cinnamon and ½ teaspoon of nutmeg together until combined.
  3. Spray a 9-inch spring form pan with nonstick spray. Press the graham cracker crust into the pan and let it cool while you prepare the filling.
  4. In a large bowl add cream cheese, white sugar, remaining nutmeg, remaining cinnamon and pinch of salt.
  5. Whip together until smooth and fluffy.
  6. In a separate bowl, whip the heavy cream until fluffy and continue whipping as you gradually add in the eggnog. Whip until it forms stiff peaks once again.
  7. Fold the heavy cream mixture into the cream cheese. Pour it onto the crust and spread evenly.
  8. Cover with plastic wrap and refrigerate for 8-10 hours.
  9. Slice into 8 slices and serve immediately. Enjoy every bite!
