A deliciously refreshing cocktail with the natural sweetness of apple, the wonderful floral hints of elderflower and herbal notes of gin.

Ingredients
- 185 ml gin 3/4 cup
- 1½ tablespoon elderflower cordial
- 500 ml sparkling apple juice 2 cups
- ice plenty
- 250 ml champagne 1 cup
- apple to serve, slices
- lemon to serve, slices
Instructions
- Place the gin and cordial in a cocktail shaker with plenty of ice. Shake well.
- Add the sparkling apple juice and stir gently.
- Pour into flutes, top with champagne and garnish with a slice of apple on the side.
