Entomatadas are fried corn tortillas smothered in tomato sauce and filled with tangy queso fresco. They’re delicious and so easy to make!

Ingredients
- 6 roma tomatoes
- 1/2 medium white onion
- 1 Jalapeno pepper or serrano (more heat)
- 2 cloves garlic
- 1 teaspoon kosher salt
- 1/2 tsp Mexican oregano
- ½ cup chicken broth
- 1 tsp olive oil
- 1 cup vegetable oil frying tortillas
- 12 corn tortillas
- 10 ounces queso fresco
Toppings:
- queso fresco
- Mexican crema
- sour cream
- cilantro
Instructions
- Place tomatoes, onion, jalapeño, garlic, salt, oregano and broth in a blender. Puree until completely smooth.
- Heat a teaspoon of olive oil in a large skillet over medium heat. Add the blended tomato mixture (be careful as this might sputter) and bring to a boil. Reduce heat to low and simmer for 10 minutes until slightly thickened. Turn of heat, cover and set aside.
- Heat vegetable oil in a small skillet over medium-high heat. Quickly, lightly fry the corn tortillas for 10-15 seconds per side and transfer to a plate lined with paper towels to absorb excess oil.
- Dip each tortilla in the blended tomato mixture, then placing on a plate, fill it with queso fresco, and fold it over. Make 3 per plated serving.
- Spoon more of the blended tomato mixture on top, then garnish with more queso fresco, Mexican crema and cilantro. Serve immediately.
