Entomatadas Recipe

Entomatadas are fried corn tortillas smothered in tomato sauce and filled with tangy queso fresco. They’re delicious and so easy to make!

Ingredients

  • 6 roma tomatoes
  • 1/2 medium white onion
  • 1 Jalapeno pepper or serrano (more heat)
  • 2 cloves garlic
  • 1 teaspoon kosher salt
  • 1/2 tsp Mexican oregano
  • ½ cup chicken broth
  • 1 tsp olive oil
  • 1 cup vegetable oil frying tortillas
  • 12 corn tortillas
  • 10 ounces queso fresco

  • queso fresco
  • Mexican crema
  • sour cream
  • cilantro

Instructions

  1. Place tomatoes, onion, jalapeño, garlic, salt, oregano and broth in a blender. Puree until completely smooth.
  2. Heat a teaspoon of olive oil in a large skillet over medium heat. Add the blended tomato mixture (be careful as this might sputter) and bring to a boil. Reduce heat to low and simmer for 10 minutes until slightly thickened. Turn of heat, cover and set aside.
  3. Heat vegetable oil in a small skillet over medium-high heat. Quickly, lightly fry the corn tortillas for 10-15 seconds per side and transfer to a plate lined with paper towels to absorb excess oil.
  4. Dip each tortilla in the blended tomato mixture, then placing on a plate, fill it with queso fresco, and fold it over. Make 3 per plated serving.
  5. Spoon more of the blended tomato mixture on top, then garnish with more queso fresco, Mexican crema and cilantro. Serve immediately.
