Falafel Bowl

Creamy and dreamy, this Falafel Bowl will be your new favorite plant-based meal!

Ingredients
- 1/2 cup quinoa
- 2 cups mixed greens like spinach or arugula
- 16 falafel balls
- 1 cup cherry tomatoes halved
- 1 cucumber sliced
- 1/2 cup red onion thinly sliced
- 1/2 cup hummus
- 1/4 cup Tahini sauce
- Juice of 1 lemon
- 2 tablespoons olive oil
- salt to taste
- freshly ground black pepper to taste
Instructions
- Prepare the quinoa according to package instructions and set aside to cool.
- Arrange the mixed greens at the bottom of each bowl. Top with cooked quinoa.
- Distribute the falafel evenly among the bowls. Add cherry tomatoes, cucumber slices, and red onion.
- Add a dollop of hummus to each bowl. Drizzle tahini sauce over the top.
- Squeeze fresh lemon juice over each bowl and drizzle with olive oil. Season with salt and pepper to taste and serve.
