Feijão Tropeiro

Feijão tropeiro is a dish from Minas Gerais and São Paulo, made with red beans, hot sausage and cassava flour.

Ingredients
- 16 oz. Kidney Beans , soaked and cooked
- 6 oz. Bacon
- 8 oz. pepperoni sausage , cut into pieces
- 2 tablespoons vegetable oil
- 2 onions , finely grated
- 6 cloves garlic , pressed
- 1 cube meat stock
- 5 kale leaves , very finely chopped, cooked and drained
- ½ cup boiling water
- 4 eggs
- 3 spoons cassava flour
- fresh flat-leaf parsley
- salt

Instructions
- Heat the oil in a Dutch oven over medium heat and brown the bacon bits over low to medium heat for 5 minutes.
- Remove the bacon from the pot and set aside.
- In the same Dutch oven, sauté the spicy sausage pieces for 5 minutes over low to medium heat. Remove them from the pot and reserve them.
- In the same Dutch oven, sauté the onion and garlic, then add the eggs and scramble until cooked.
- Add the previously cooked and drained beans, the cabbage, the meat stock cube and the boiling water. Mix well until the stock cube dissolves.
- Add the bacon and the pieces of spicy sausage, then add the cassava flour.
- Generously add chopped fresh flat-leaf parsley, salt and pepper, mix well and serve immediately.
