Feijão Tropeiro

Ingredients

  • 16 oz. Kidney Beans , soaked and cooked
  • 6 oz. Bacon
  • 8 oz. pepperoni sausage , cut into pieces
  • 2 tablespoons vegetable oil
  • 2 onions , finely grated
  • 6 cloves garlic , pressed
  • 1 cube meat stock
  • 5 kale leaves , very finely chopped, cooked and drained
  • ½ cup boiling water
  • 4 eggs
  • 3 spoons cassava flour
  • fresh flat-leaf parsley
  • salt

Instructions

  1. Heat the oil in a Dutch oven over medium heat and brown the bacon bits over low to medium heat for 5 minutes.
  2. Remove the bacon from the pot and set aside.
  3. In the same Dutch oven, sauté the spicy sausage pieces for 5 minutes over low to medium heat. Remove them from the pot and reserve them.
  4. In the same Dutch oven, sauté the onion and garlic, then add the eggs and scramble until cooked.
  5. Add the previously cooked and drained beans, the cabbage, the meat stock cube and the boiling water. Mix well until the stock cube dissolves.
  6. Add the bacon and the pieces of spicy sausage, then add the cassava flour.
  7. Generously add chopped fresh flat-leaf parsley, salt and pepper, mix well and serve immediately.
