Ingredients

Servings
  • 16 ounces sour cream
  • 2 tablespoons ranch seasoning mix see notes, homemade
  • 1 can sweet corn 15 ounces (see notes)
  • 1 can black beans drained and rinsed, 15 ounces (see notes)
  • 1 can ROTEL drained, 10 ounces (see notes)
  • 1 cup cheddar cheese shredded sharp
  • ¼ cup Bacon optional, cooked and finely crumbled or bacon bits
  • salt to taste
  • black pepper to taste

Instructions

  1. Combine all ingredients in a large bowl and stir to combine. Taste for seasoning, adding salt and pepper as desired.
  2. Cover and chill for at least 1-2 hours before serving with corn chips or tortilla chips.

Notes

  • 2 tablespoons homemade ranch seasoning mix equals 1 (1-ounce) packet of store-bought ranch mix. Feel free to use the packaged version if you prefer.
  • I recommend using no-salt-added canned corn, beans, and Rotel so that you can control the amount of salt in this recipe. If you cannot find no-salt-added versions, keep in mind that you will not need to add as much or any salt to the final dip.
  • For a spicier dip, feel free to add a few dashes of your favorite hot sauce.
  • Makes about 6 cups.
