Focaccia Breadsticks

These focaccia breadsticks combine the herby flavors of Italian seasoning and garlic with a tender, dimpled dough texture. The dough is prepared with yeast, sugar, and olive oil, then allowed to rise before baking in a well-oiled pan where it is shaped into breadsticks. The topping of garlic powder, kosher salt, and grated Parmesan cheese adds a savory finish. This recipe produces breadsticks that offer both softness inside and a lightly crisp exterior, suitable for serving as a snack or alongside meals.

Description

Focaccia Breadsticks are made from a yeast-leavened dough enriched with olive oil, sugar, and seasoned with Italian herbs and fresh garlic. After mixing and allowing the dough to double in size, it is spread in a baking dish coated with olive oil, where characteristic dimples are pressed into the surface. The dough is then sliced into sticks before baking at a high temperature, ensuring a crisp crust with a soft, airy interior. A topping of garlic powder, kosher salt, and grated Parmesan is brushed on with additional olive oil, enhancing the flavor and texture. These breadsticks are versatile as an appetizer or accompaniment to salads and soups.

The method includes careful dough preparation with warm water and activation of yeast followed by a one-hour rise period. The dough is then shaped and dimples are created by finger pressure to hold the olive oil and toppings. The cutting pattern specified suits the 7x11-inch pan size but can be adjusted based on pan size to customize breadstick length and thickness.

Adjusting the toppings to taste is possible, and the recipe supports variations such as different herbs or cheeses. Baking at 450°F provides the right environment for a golden crust without drying out the breadsticks.

  • 2 teaspoons extra virgin olive oil divided
  • ½ teaspoon garlic powder

  • ¼ cup Parmesan Cheese grated, 25 g

Instructions

  1. In a large bowl, combine water, yeast, and sugar. Let the mixture rest for about 5 minutes, or until the yeast blooms.
  2. In a small bowl whisk together the olive oil, Italian seasoning, garlic, and salt.
  3. Pour half of the oil mixture into the yeast mixture. Set the remaining oil aside.
  4. Add the flour to the yeast and oil mixture. Stir to combine.
  5. Add the dough to a greased bowl and cover with a clean towel. Allow the dough to rest in a warm place for 1 hour, or until the dough has doubled in size.
  6. Preheat oven to 450°F.
  7. Pour the remaining oil mixture into a 7×11-inch baking dish. Use a pastry brush to coat the bottom of the pan.
  8. Transfer the risen dough to the prepared baking dish. Work the dough to the edges. Use your fingers to create dimples in the dough.
  9. Using a pizza cutter or a sharp knife, make 3 equally-spaced slices across the short side of the baking dish*. Then, slice down the center of the dough lengthwise to create a total of 8 breadsticks.
  10. Brush the top of the breadsticks with one teaspoon of olive oil.
  11. Sprinkle the garlic powder and salt evenly over the breadsticks.
  12. Bake for 18-20 minutes, or until golden brown.
  13. Immediately brush the baked breadsticks with the remaining olive oil and sprinkle with parmesan cheese. Serve warm.

Notes

  • Dough rise time is approximately one hour until doubled in size, which is important for texture.
  • Cutting the breadsticks as per pan size affects the stick size; adjust to preference.
  • Apply toppings evenly to enhance flavor and texture of the crust.
