- 2½ cups heavy cream (very cold)
- ½ cups caster sugar
- 1 teaspoon vanilla extract (optional)
- 10 oz blueberries
Equipment

- parchment paper
- 8 cheesecloth squares
- Stand mixer
Instructions

- Rinse the cheesecloth with clean water, and use it to line a colander. Place the colander over a bowl.
- Place the faisselle cheese in the cheesecloth, and let it drain for 2 hours in a cool place.
- Spread the blueberries on a sheet of parchment paper, and place them in the freezer for 30 minutes.
- Whip the cold heavy cream until it's thickened.
- While continuing to whisk, add the caster sugar and vanilla extract at the end.
- Gently fold the whipped cream into the drained faisselle cheese, lifting the mixture with a spatula.
- Divide the fontainebleau into glasses or verrines lined with a small square of cheesecloth.
- Place a few frosted blueberries on top, then serve.
