Freezer Apple Pie Filling

This Freezer Apple Pie Filling combines sliced Golden Delicious apples with lemon juice, sugar, butter, and warm spices like apple pie spice and nutmeg. The apples are cooked briefly to soften and release juice, then the syrup is thickened separately and combined back with the fruit. The filling cools completely before freezing, making it convenient to have ready for future pies or desserts. The gentle cooking preserves apple texture while creating a spiced, syrupy consistency.

Description

Freezer Apple Pie Filling is prepared by peeling, coring, and slicing baking apples, which are then tossed with fresh lemon juice to prevent browning and add brightness. Sugar is added to sweeten, and the mixture is cooked with butter until the sugars dissolve and the apples soften slightly, releasing their juices. The cooking liquid is then strained and simmered separately to reduce and thicken into a syrup with an amber hue. Finally, the apples are recombined with the syrup and seasoned with apple pie spice and a touch of nutmeg, infusing warm autumn flavors.

The texture balances tender apple wedges with sticky spiced syrup, ideal for baking into pies or crisps. Cooling the filling before freezing helps it maintain quality and flavor over time. This filling offers a ready-to-use option that simplifies pie assembly and keeps well for up to six months in the freezer.

It can be baked directly from frozen without fully thawing, saving preparation time on baking day. For those reducing sugar intake, substituting granulated sugar with a monk fruit sweetener provides a sugar-free alternative while preserving sweetness.

Ingredients

Servings
  • 3 pounds apple 7-8 baking apples, like Golden Delicious
  • 2 tablespoons lemon juice fresh
  • 2/3 cups granulated sugar
  • 1/4 cup butter unsalted
  • apple pie spice 1 teaspoon
  • 1/8 teaspoon ground nutmeg

Instructions

  1. Peel, core, halve the apples and slice each half into 4 wedges. Place in a large bowl with the lemon juice. Fold apples so each is evenly coated with lemon juice.
  2. Add sugar and fold into apples.
  3. In a large skillet, melt the butter over medium-high heat.
  4. Add the apples and cook until the sugar dissolves and the juice begins to simmer.
  5. Cover and reduce heat to medium-low, and cook until the apples soften slightly and releases their juices (approximately 5 minutes).
  6. Remove skillet from heat and strain apples in a colander, catching the juice in a bowl. Return the juice to the skillet and simmer over medium heat until it bubbles and begins to turn amber and thicken (about 10 minutes).
  7. In a large bowl, mix the apples with the juice from the apples and add the apple spice and nutmeg. Let cool completely.

Notes

  • Store the prepared apple pie filling in the freezer for up to six months to maintain freshness.
  • The filling can be baked without completely thawing, which helps save time during baking.
  • For a sugar-free version, replace granulated sugar with a granulated monk fruit sweetener or another sugar-free alternative.
