French fries (frites) are potato sticks that are fried in vegetable oil or animal fat, and that originate from Belgium.

Ingredients
- 2 lb starchy potatoes , bintje
- 2 quarts Frying oil (or 6 lb of blanc de boeuf)
- salt

Instructions
- Peel the potatoes using a peeler and wash them under running water.
- On a cutting board, cut the potatoes into sticks approximately ½ inch (1 cm) thick, depending on taste.
- Dip the potato sticks in a large quantity of room temperature water and let them soak for 30 minutes.
- Then drain them and dry them thoroughly in a thick cloth.
First frying
- Heat the beef fat or oil in a deep fryer at 300 F (150°C).
- Place the fries in the basket and immerse them in the frying fat.
- Leave to fry for 5 minutes.
- Remove the frying basket and drain the fries.
- Transfer the fries to paper towels and let them cool for 30 minutes.
Second cooking
- Bring the fryer temperature to 350 F (180°C).
- Place the fries back in the basket and immerse them in the frying.
- Fry for 4 to 5 minutes or until fries are golden brown.
- Remove the basket, drain, shaking well.
- Place the fries in a dish lined with absorbent paper
- Season generously with salt and serve hot.
